Sweet Potato Falafel

I've been trying to make sweet potato falafel for the last year. And I could never seem to get all the ingredients in the house at one time! But this week I finally made it, finally.


Ingredients
2 medium sweet potatoes
2 teaspoons of garlic powder
1 1/2 teaspoon ground coriander
Juice of half a lime original recipe suggested lemon but you make do with what you got
1 cup of chickpea flour
Olive Oil for the baking sheet
1 cup of bread crumbs
salt & pepper





Steps:
1. Microwave the sweet potatoes (or bake them at 400 degrees for about 45 minutes, but I got lazy) . Wrap them in paper towel and sprinkle with water before placing them in microwave. Microwave them one at a time for 5 to 6 minutes each. 

2. Preheat oven to 400 degrees. unless you baked your sweet potatoes in the oven.

3. Peel and mash your sweet potatoes, garlic powder, coriander, lime juice, and chickpea flower together in a bowl (I used an electric mixer for this step)

4. Roll the mashed up ingredients into balls, then dip them into a bowl full of bread crumbs and roll them around until they are covered.

5. Put parchment paper onto a cookie sheet and drizzle olive oil over it.

6. Put the breaded falafel onto the cookie sheet and bake for about 15 minutes, flipping them over halfway through. They should be golden brown when they are done.






Eat them in a pretty sandwich with mixed greens, tomato, and spicy piri piri mayonaise (below).
